Swiss Chard Quiche

No idea what to do with your Swiss Chard? Joanie couldn’t wait to share this recipe! Otherwise, you can use Swiss Chard in substitution of spinach in any recipe- we enjoy it chopped and lightly steamed with olive oil, sea salt and malt vinegar.

1 (8”) pie shell in pie dish
6 to 8 eggs
4 spring onions, chopped
6 oz. Swiss Chard, washed, center stem removed, and chopped
2 Tbsp. Parsley, chopped
3 Tbsp. chopped Herbs,
such as Tarragon, Chives, Cilantro, Chervil, Dill, Basil, etc.
¼ c. milk
1 ½ c. shredded Swiss OR cheddar cheese

Salt and black pepper to taste

Heat the oven to 375 degrees.

Beat eggs in large bowl. Add all other ingredients and mix thoroughly.

Pour mixture into the pie shell. Cover and bake for 45 minutes.

Remove the cover and bake for a

further 20 min., or until the top is golden.

Serve hot or cold.
